Recipe that worked!

1 Bell pepper (any colour you like, mine was yellow)
2 Big carrots
4 Stalks of celery
4 Green onions
Pepper
Salt
Parsley or parsley flakes
Half a lime
2 chicken breasts (boneless or no doesn't matter)
One of those tetra-paks of chicken stock, or your own stock
Some butter
THE DAY BEFORE (yeah it's one of these but I think this is why the veggies were so good)
Chop up your veggies EXCEPT the zucchini. If you want to use other ones, go for it, but keep things like potatoes and zucchini and etc. out of the soup until you actually start boiling it or they'll turn to mush. Put veggies minus zucchini (or potato or etc.) in a bowl. add salt and pepper and parsley flakes. Stir it around, then cover it and pop it in the fridge overnight. It'll kind of 'marinate' and the flavours will combine a little.
THE DAY YOU INTEND TO HAVE SOUP
Get your soup pot out, and put a little butter in the bottom, then put it on the heat. When the butter melts and starts sizzling, dump your veggies in and sauté them in the pot. When the celery's kind of translucent, dump in your stock, then set that pot aside on low heat. You can add more spices here if you want; I just did a little more pepper.
Chop up the poultry into one-inch-ish pieces. Dump 'em in a frying pan with a little butter, then add lime juice, salt and pepper. (Lemon would work, too; I just like limes better). When the chicken's cooked through, dump that in the pot with the veggies.
At this point you'd put your starchy veggies in, or the ones that just cook fast. This was when I hucked the zucchini in. Snow peas or sugar-snap peas or green beans or something would be good too - I actually bought green beans, but left them out because I nicked my thumb cutting the zucchini LIKE A BADASS NINJA and didn't wanna chop anything anymore.
Turn up the heat under the soup and let it boil gently for a bit. I did five minutes, or thereabout.
Take soup off heat. Put soup in bowls! Have soup with toast or a nice baguette or something. This makes enough for four people; I cook like my dad i.e. too much XD
Yeah yeah I know 'but soup is easy' - SOUP is easy. REALLY GOOD SOUP is less easy XD
